Hi guys,
I’m wondering which are the thermolabile vitamins. Searching on the web I found contrasting results: someone says that the vitamin B1 is thermolable, others say that it resists well at high temperatures. The same thing happens with the vitamin B5.. who says the truth? 😕I hope you can help me 🙂 and if there is already a similar question.. I apologize in advance 😉

The most thermolabile is folate (vitamin B9), followed by vitamin B1 (thiamin), B6 (pyridoxine) and vitamin C. But most vitamins are thermolabile to some extent

It is not very clear on terms "thermolable" and "thermostable" while reading a biology book, however it is logic that they are likely all thermolable on some extent.Thanks again

I assume if only 25% of a vitamin is destroyed it can be called thermostable.
