What are the enzymes that are used for cutting Insulin? Am I right in thinking that EcoR1, BamH1, and Hind111 are the ones that cut it and what is the vector that can be used for Insulin?

Insulin is a protein . How can restriction endonucleases cut it?

yeah, those are valid restriction enzymes.

Could someone give me any good sites that explain about inserting a vector into E.coli? I have looked but nothing good enough seems to come up.
