RNA differs from DNA — one difference is U instead of T. Why then when you look at Genbank listings for mRNA sequenecs do the sequences include T, not U?

They could do it either way. Usually, though, what was sequenced was a cDNA copy of the mRNA, so typically you report it as a DNA sequence.
